The story

Every summer, when the raw mangoes come in, the achar is made the way it's always been made at home: cut by hand, rubbed with salt and spices, and left in the sun to mature.

It's packed in mustard oil with fennel, nigella, fenugreek and whole red chillies. Sharp, hot and a little sour, the way achar should be.

How it's made

    The mangoes

    Firm raw mangoes, washed, dried and cut by hand.

  2. 02

    Salt and spice

    Rubbed with salt, turmeric and red chilli, and left overnight.

  3. 03

    Masala and oil

    Mixed with fennel, nigella and fenugreek, then covered in mustard oil.

  4. 04

    In the sun

    The jars sit in the sun for about two weeks, until the mango softens.
